- 1 lb avocados, chopped
- 2 tbsp roughly chopped cilantro leaves
- 6 cups chicken stock, preferably homemade, chilled
- 1 serrano pepper
- 1/2 jalapeno (if desired) seeded and cleaned
- 3/4 cup freshly squeezed orange juice
- 1/2 cup freshly squeezed lime juice
- 1/4 cup good Tequila,
- 1/2 tsp grated orange zest
- 1 seedless watermelon
- Salt, to taste
- With an emulsion blender, combine avocado, cilantro, 3/4 cup chicken stock, Serrano pepper.
- Add orange juice, lime juice tequila, zest, and remaining chicken stock.
- Blend until smooth.
- Strain through a sieve.
- Add salt to taste.
- Cut watermelon in half crosswise and hollow out, forming a bowl.
- Cut Watermelon into cubes.
- Pour into watermelon and garnish with watermelon cubes
